Palitaw Recipe

Palitaw is one of the famous Filipino"kakanin" (snack). It is made of glutinous rice flour, sugar, toasted sesame seeds and coconut (niyog). It is called Palitaw meaning to surface, because you know it is cooked when the dough rises up.

You can buy glutinous rice flour and frozen coconut in Asian stores. I remember when we first arrived in Canada 16 years ago, our neighbor taught me how to make "bilo-bilo" for ginataan. She told me the same ingredients are used in making Palitaw. Palitaw is sweet, chewy but still crunchy because of the coconut and sesame seeds.

Palitaw Recipe

glutinous flour with shredded coconut, sugar and sesame seed

  • 2 cups glutinous rice flour

  • 1 cup water

Topping

  • 1½ cups shredded coconut

  • 2 tbsp toasted sesame seeds

  • ¼ cup white sugar

Topping

  1. Place the sesame seed in a frying pan. Cook for about 5 minutes or until it turns slightly brown. Let it cool.

  2. Add the sugar and the toasted sesame seed. Set aside.

  3. If you're using frozen coconut like me, make sure to take out the liquid by using a strainer.

Cooking Palitaw

  1. In a bowl mix the glutinous rice flour and water.

  2. Using an ice cream scoop, take one dough and shape it into a circle.

  3. Flatten it like a coin.

  4. In a large pot, boil water. When the water is hot drop the dough one at a time. Do not overcrowd the pot.

  5. Once the dough rises up, it is cooked.

Assembly

  1. Take one palitaw and dip in sugar/sesame seed.

  2. Then dip again in coconut.
